An Easy, Cheesy, Saucy Bean Bake

Beans make me really gassy, but I’m trying to incorporate more of them into my diet. I’ve heard they’re incredibly nutritious, and as I reach my *hand me a cane* thirties, health is evermore important.

I found this easy recipe from NYTCooking, but made many adjustments to suit my taste. It’s super cheesy, saucy, and savory. Can’t recommend more for an easy lunch or dinner!

How to make it:

Preheat your oven to 375 degrees Fahrenheit.

Coat an oven-safe pan with olive oil (I used my Staub pan – I use it for everything!) When the oil heats up, add in a generous amount of minced garlic and diced shallots or onions (or both!) Let sizzle until the garlic is slightly browned.

Stir in a generous amount of tomato paste and some oregano. Don’t let anything burn.

Add in a can of white beans. Mix everything together in the skillet. Sprinkle lots of cheese on top. I used the Trader Joe’s Quattro Formaggio blend.

Transfer the skillet into the oven and let bake until the cheese is crispy and browned on top – about 5-10 minutes. Et voilà!

You can adjust the portions of everything based on how many servings you want to make. I didn’t add in any water and liked it better that way, because it made it that much thicker and scrumptious!
