I did it…I did that Baked Feta Pasta w/ Tomatoes trend thing. And it was actually super tasty. Definitely a trend worth trying.
How to make it:
Preheat the oven to 400 degrees Fahrenheit.
Prep something oven-safe (I used my Le Creuset Dutch Oven) with cherry or grape tomatoes, lots of olive oil, garlic (I used minced but you can probably put in full cloves), and a block of feta cheese smack in the middle. I added in some Full Belly Farm‘s spinach to add some color – very lazily just spread it out on top.
Pop that in the oven for about 30 minutes, depending on how many servings you’re making. Meanwhile, cook up some pasta. I used fresh pasta because my friend told me that it soaks of cream better.
Once both are done, take the tomato/feta situation out of the oven, mix in the pasta with some pasta water, and then voilà! It’s SO tasty, super easy, and worth a try.
