Sadaharu Aoki’s Tarte Caramel Salé (Salted Caramel) – tasted like a Twix made by the hands of God. Absolutely the best pastry, if not food, I’ve had in Paris. It’s 5€ but I beg of you to spend it and try this. It’s not too mind-numblingly sweet – the caramel literally oozes out, while the cream on top softens the harder outer shell of the tart.
What I love about Sadaharu Aoki is that he was trained in both Japan and France, so he has the elegance and tradition of a French pastry man, but the clean, fresh Asian component. The packaging is done with such care as well; they use a sticker to make sure the pastry doesn’t move around in the box.
